Your regular pancake with a twist of sauted spinach and melted cheese.

What you need:
1 ½ cups white self raising flour
250g spinach, finely chopped
2 cheese cubes
2 eggs
1 cup milk
Pepper and salt to taste
Butter and oil for frying
How to make:
- In a mixing bowl, combine flour and ½ tsp salt.
- Separate eggs. Take out egg white in a separate bowl and mix yolk with flour.
- Add milk to flour and combine well to form a thick batter.
- Whisk egg white till it turns stiff. It should form a peak when you take spoon out. Fold egg white with spoon slowly into the batter, making sure enough air goes into it.
- Heat a little oil in a pan and slightly fry spinach until it turns soft. Add some salt.
- Heat another pan and melt butter. Before it turns light brown, add sufficient flour batter to form a disk.
- When bubbles start developing, turn the pancake and cook from the other side.
- When the side is cooked slightly, turn it over, spread spinach, and grate some cheese on it. Add a pinch of pepper.
- When the cheese has melted, roll the pancake and enjoy.
