What you need:
1 medium cauliflower, cut into medium-sized pieces
2-inch ginger, grated
5 garlic cloves, grated
3 eggs
2 tbsp cooking oil
1 tsp mustard seeds
¼ tbsp split urad dal
1 strand curry leaves
2 onions, chopped
2 green chillies
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
How to make:
1. Soak cauliflower in hot water for 10 minutes.
2. Meanwhile, heat oil in a pan and add mustard seeds. Split open green chillies and throw in. Add onions, urad dal and curry leaves and fry till onions turn translucent. Add turmeric powder, red chilli powder and salt.
3. Separate cauliflower from and throw in the mix. Cook for a few minutes.
4. Break eggs onto it and keep frying till the texture becomes that of scrambled eggs. Serve hot with chapattis or alongside rice and dal.
