Tomato Stacks
Combine tomatoes and cheese or cottage cheese (paneer) to create these creative tomato stacks. All you need is tomatoes slices, paneer/mozarella cheese slices, salt, pepper, olive oil and basil. Take a tomato slice as a base, sprinkle some salt and pepper over it and then put a paneer/cheese slice along with some basil on top. Repeat this three times and then pour some olive oil over the stack. Dive into the delicious world of cheese and tomatoes!
Noodles/Maggi in Tomato Sauce
We all keep noodles or Maggi stored for hungry days. Create a yummy tomato base for your maggi with this easy recipe. Before you boil the noodles, put some vegetable oil in a pan. Add cumin seeds, red chilli powder and some coriander powder to the oil. Now add finely chopped tomatoes. Add salt and cook it for 2-4 minutes. Add soy sauce and ketchup to this base. Now add water to boil the noodles along with the sauce. Maggi with a desi tadka is ready to be served!
Herb-Parmesan Roasted Tomatoes
A healthy tomato recipe, this one will satiate your senses like nothing else. Preheat oven to 425° and line a rimmed baking sheet. In a bowl, add Parmesan cheese, oregano, salt, pepper and some crushed garlic. Stir it to form a mixture while adding olive oil. Put tomato slices on baking sheet and on top, add the mixture and make sure it is evenly spread. Bake for 20 minutes or until the tomatoes turns soft. Serve piping hot!
Cucumber Tomato Salad
It is not your day and all you can find in the fridge is cucumber and tomatoes. No worries at all guys! You can use them to create a lip-smacking salad! Oh yes you can! Slice the tomatoes and cucumber and add lemon, olive oil, onion slices, salt and pepper. For freshness, add chopped parsley or basil to the salad. Enjoy a huge bowl of health while watching TV!
Tomato Rice
Surprisingly, there is always some leftover rice in the kitchen. And how can we not make the most of it right? For a delicious bowl of tomato rice, heat some oil in a pan. Add mustard seeds, green chillies, chopped onions and ginger paste. Fry till onions turn soft. Add a healthy serving of chopped tomatoes now and cook till they turn pulpy. Now add coriander, cumin and garam masala powder and salt to taste. Cook for another 4-5 minutes and then add the rice after turning off the gas. The rich reddish yellow color of the dish due to a whole lot of tomatoes added to it enhances the look and the hunger to eat it. Relish it with some papad!
