Yes, that is what bread is to most of us. When the stomach growls with hunger-pangs in the middle of the night, or even during a busy day, there are only a few things that can save life and bread is one of them.
Bread toast, bread sandwich, bread-butter, bread-jam and bread with “raat ki bachi huyi sabzi” are the popular bread avatars!
No no no, we are not going to stop at these predictable bread recipes. We have something really interesting and quite creative for all those who would not shy away from putting a little bit of extra expertise to create something yummily alluring! All that with bread…our darling BREAD!!

For Breakfast – Bread Stir Fry Rala Mila
What you need for two servings:
One cup chopped onions, one cup chopped tomatoes, one cup chopped sweet-corn, one cup finely cut green beans, one cup finely cut cauliflower, one cup finely chopped red, green and yellow peppers. 4-5 brown or white bread slices, half tablespoon cumin seeds (jeera) and half tablespoon mustard seeds (sarson) for tempering, salt, pepper, red chilli powder to taste, one tablespoon dry coriander powder, two tablespoon cooking oil.
Let’s Cook It :
Roast the bread slices on a tawa or toaster, from both sides, till they go crisp and keep them aside. Take a pan and heat cooking oil in it. Add cumin and mustard seeds till they start to flutter. Add chopped onions and sauté till they go golden brown. Add all the chopped vegetables and stir fry them for 3-5 minutes till they go tender. Add salt, add all the other spices and mix well. Cut or break the crisp bread slices in small pieces and add to the veggies, mix well. Remove from flame and serve hot. You can add other vegetables as per your taste. To make it more tangy, you can add a little tomato ketchup while you serve.
For Lunch – Bread Parantha with Curd
What you need for two paranthas:
3-4 bread slices, one cup chopped onions, two tablespoon chopped coriander, half tablespoon red chilli powder, half table spoon ajwain, kneaded wheat flour dough for paranthas.
Let’s Cook It :
Filling –
Soak the bread slices in water for one minute, strain and bring out on a big plate. Mash the slices to a coarse paste, add chopped onions, coriander, ajwain, salt and chilli powder. You can add any other spice to your taste. Blend the mixture well with fingers. The filling is ready.
Paranthas –
Take a medium sized portion of kneaded dough and roll it on a flat surface with a rolling pin, just like you make a chapatti, making it wide enough for two tablespoon of prepared filling. Put the filling on the top and fold the chapatti over the filling to cover it completely. You get a filled ball of dough. Smear it generously with dry wheat flour and roll it on the flat surface to a medium thick parantha. Heat a tawa, smear it with cooking oil and put the parantha on tawa. Let it cook till it is brown, turn it over and let the other side cook. Smear some more oil on both the sides and let it go crisp golden brown from both sides. Keep turning till you get desired results. Bring down on the plate, serve with a generous bowl of fresh curd and some teekha achaar.
