How to make vegetarian sizzler – The smoke coming out of a sizzler is enough to make anybody go weak in their knees. Let’s look at a vegetarian sizzler recipe that can take up many forms and flavors.
With a bounty of flavors and spices and that smoky taste that lingers in the mouth for a long time, sizzlers are absolutely lip-smacking dish to relish.
Non-vegetarians might argue that vegetarians don’t have too many options when it comes to sizzlers.
Guess what? You are absolutely wrong!
For the pious festival of Diwali, we have come up with an elaborate yet stunning vegetarian sizzler recipethat will make even a non-vegetarian’s mouth water.
By replacing some ingredients, you can create its many variants too!
Indonesian Sizzler
This one’s a combination of crispy potatoes, flavored rice, smoky curry flavored satay, served with spicy-sweet peanut sauce. Can’t wait right? Let’s start!
Noodles
Heat some oil in a pan and sauté some onions along with ginger-garlic and green chilli paste. Add some chopped and boiled carrots and French beans. Now add the boiled rice noodles to the pan and mix in some soya sauce over high flame. Add salt to taste. Top the noodles with finely chopped coriander and keep aside.
Peanut Sauce
Take ¼ cup of chopped onions and 2 large crushed garlic cloves. Now in a pan, heat some oil and add these to fry. Now add one cup of coconut milk, 4 tbsp of peanut butter and ½ cup water. Bring this to a boil and then simmer to add 1 tbsp lemon grass, 1 tsp chilli powder, 1 ½ tsp brown sugar, juice of half a lemon and salt to taste. Cook it for 4-5 minutes, Keep aside and take out the lemon grass.
Satay
Take a cup of cottage cheese cubes,½ a cup of diced capsicum, ½ cup of halved mushrooms and 2 tsp of curry powder and ½ cup peanut sauce and salt to taste. Combine all these in a bowl and marinate for 10-15 minutes. Thread them onto skewer sticks and grill for 5-7 min.
Crispy Potatoes
Cut boiled potatoes into strips, and deep fry them till they turn crisp. Now in a small bowl, combine 1 tbsp soya sauce, 1 tsp corn flour, ¼ tsp sugar and salt with 1 tbsp water and set aside. Heat 1 tsp oil in a pan and sauté some ginger-garlic paste with green chillies. Add the potatoes and soy sauce mix and cook on high flame. Top with coriander and spring onions.
Finally, heat a sizzler plate on open flame till it turns red and place it on the wooden tray. Place noodles on one half and potatoes on the rest. Top it with the satay skewer.
Reheat the peanut sauce and add some water to it. Pour it over the tray and pour some oil-water mixture over the plates for a sizzling effect!
Replace the flavored noodles with buttered rice and taste a new sizzler! Just heat some butter and sauté onions in it. Add the cooked rice along with salt and some parsley.
Make another variety by using paneer tikka in place of potatoes. Combine some curd, ½ tsp besan, ginger garlic paste, chilli powder, kasuri methi, garam masala, coriander, salt and 1 tablespoon of mustard oil for the marinade. Add paneer cubes, capsicum dices and diced onions. Put this aside for 15 minutes.
Arrange these on skewer sticks now.
Saute these in mustard oil from all sides.
You can make red sauce or even makhani sauce to replace peanut sauce. For the makhani sauce, use tomato puree, ginger, garlic, cashewnuts and cloves with fresh cream, kasuri methi and red chilli powder.
