To keep the heavy winter chills at bay, most of the Indians make sweets with ghee. Gajar (Carrots) is available in abundance during the season in every part of the country and is therefore used to make halwa in different styles.
The traditional recipe of this dessert is made with lots of sugar and ghee. Here is a quick recipe that you can use to substitute sugar and cut down on ghee at the same time.
All you need is…
- 1 kg carrots
- 4 cups of milk
- 1 Teaspoon cardamom powder
- 2 Tablespoon ghee
- Half cup of Milkmaid
- Chopped nuts (Optional)
Method
- Peel and grate the carrots
- Simmer milk for 5 minutes
- Heat ghee in a heavy pan and add grated carrots
- Cook over a gentle flame for 10-15 minutes
- Add the milk and mix it well with cardamom powder
- Add the milkmaid to this and continue cooking until the halwa turns deep reddish colour
- You could garnish it with nuts of your choice
- Serve it hot with a scoop of vanilla ice cream
Tip: Keep the flame on medium speed while preparing this halwa. Overheating can crystallise milkmaid! I am sure you wouldn’t want to have a rock solid halwa.
