Eggless Pancakes – Did you think that Sundays were not just about sleeping in and loading on junk?
Ah, you’re mistaken. As god’s own day is also the perfect excuse to make yum and healthy breakfasts/brunches. We know that you don’t have the luxury to have a fancy tuck-in on weekdays, so make your Sunday cooking an epic one!
Today, we will teach you to make one of the classics of Sunday brunches, the humble pancake…minus the eggs. Yes. Let’s whip up a delicious spread of fluffy eggless pancakes. Ready? Read on:
Eggless Pancakes –
What do you need?
Maida:- 1 cup,
Milk:- 1 cup,
Sugar:- 1 tblsp
Salt:- A pinch
Oil:- 1 tblsp
Baking powder:- 1 tblsp
Vanilla essence:- according to taste
Butter and honey:- according to taste
How to make it?
Add maida, baking powder, vanilla essence, sugar, salt in a bowl and whisk thoroughly. Keep pouring milk and oil to the bowl, constantly whisking it to get a thick batter. You can use baking soda instead of baking powder as well. But baking powder is less harmful than the former. Once the batter is of considerable thickness (read: spread-worthy), heat a pan over a medium flame and turn it off when the pan becomes hot.
Turn it on again after five minutes and grease the pan with butter or oil. Now pour a ladle of batter onto the pan. Do not spread or play with it, like you would to make dosa. Let it set for a couple of seconds before you start fiddling around with it. Let the batter form bubbles and turn light brown, so you can flip it around to the other side.
Add oil or butter to the edges so that it’s easy for you to flip the pancake. Cook till the edges are brown and the centre is slightly golden. You can also cover the pan with a plate to lock-in the moisture and make fluffier and softer pancakes. In fact, you can use any of the artificial essences available in the market. But make sure to not overdo the essence as it can overpower the taste of milk and other ingredients.
Moreover, if you’re not comfortable using sugar, add honey instead. It’s healthier and yummier than brown/white sugar. Serve hot with the jam of your choice.
